How To Cook a Vegetable Packed Dinner That Doesn’t Suck

Quarantine 15 is real kids! I have been snacking so much out of boredom, ordering take out to support local businesses and baking so much. My family decided that we needed to make a vegetable packed dinner, and this is what we made!

What You’ll Need:

  • 1 sweet potato
  • Package of broccoli (refridgerated not frozen)
  • 1 large carrot
  • 1/2 a can of corn
  • Brussel Sprouts
  • 1/2 red onion
  • Beets (we bought one package of chopped beets)
  • Kale
  • Brown Rice
  • Chicken
  • Olive Oil or any kind of sauce you want to cook it in
  • Salt and pepper

This is literally the easiest recipe I barely have to explain to you how to make it.

First, chop up all of your vegetables.

Next, Begin Grilling Your Chicken

Then Begin Cooking Your Rice

We cooked our rice seperately because we did not have a pan big enough for all of the vegetables and the rice. If you are cooking for one, you can just cook it all in one small pan.

Finally, Cook Your Vegetables

We put a lid over the vegetable pan to allow them to cook faster.

Combine, and Enjoy!

This vegetable packed dinner is my favorite meal that we have had in a long time. All of the chopped up vegetables adds lots of vitamins and value to your diet. Best of all, it doesn’t taste like cardboard! Feel free to add your own sauces or spices to make it a bit more interesting. We made extra and it is amazing because I have been eating the leftovers as side dishes everyday for lunch.
